Season the whole beef tenderloin with salt and pepper, coat it in flour, and sear it in a pan with a little oil for a short time on each side. Once the tenderloin is removed, sauté finely chopped onion slowly in the same oil. Deglaze with Sansón Coffee, and add thyme, oregano, and garlic.
Set aside the onion and add butter. Once it melts, add the beef broth and a teaspoon of instant coffee.
Add the tenderloin to the onion and cover it with the beef broth. Cover the dish. Serve the dish with a mix of lettuces and potatoes.
